On this full day workshop you will learn how to fillet fish with plenty of hands on practice. Fish will depend on availability but you will learn to poach (perfectly and simply), pan-fry with restaurant quality crispy skin, cure (perhaps gravad lax), bake (under a perfect and delicious crumb) and steam. We will make sauces and accompaniments for each dish and taste as we go along. We will break for lunch around 1pm with a glass of wine if you wish.

By the end of the day / course you will have learnt how to prepare and cook fish perfectly and simply in a variety of ways that demonstrate clearly how simple it is to cook fish well.
