An enormous country with a large population to feed and a diverse geography and climate, China has one of the great cuisines of the world and eating plays a major role in daily life and in rituals and festivities.
On this full day workshop you will learn how to prepare and cook a variety of dishes from across China. Chinese cooking tries to reach a balance between tastes: sweet and sour, hot and cold, plain and spicy. At the heart of Chinese food is a trinity of flavours: ginger, spring onions and garlic.
We will cook crispy Sichuan duck, five willow fish, ants climbing trees (pork, noodles), egg and tomato soup, ginger pudding and har gau (steamed prawn dim sum – homemade paste) Our aim is to capture the essence of Chinese cuisine without the cliché of typical Chinese restaurants in the UK.
