On this half day or evening workshop you will learn how to look after and use your knives properly. The course starts by explaining which knives are best for which job, generally 3 – 4 properly cared for knives will see you through most kitchen preparation with the focus on the two most useful sizes.
Time will be spent learning how to use a steel and sharpening stone correctly before moving on to using the correct knife for specific tasks and cuts; for example: julienne, brunoise, macedoine, mire-poix etc. You will also learn how to joint a chicken – which you will take home with you.
By the end of the workshop you should have increased your confidence in using a knife correctly, as well as being able to keep a keen edge on it – essential for safe and speedy preparation and an ideal first course to start with.
Knives are provided although you are welcome to bring your own provided they are reasonably sharp – a truly blunt knife takes more time than we have to sharpen. You will also be able to purchase a set of knives if you wish. These are Victorinox knives with rosewood handles. Swiss made they are excellent knives, easy to keep sharp and great value for money. This set comprises the three knives you will find most useful: 17cm santoku knife, 18cm flexible filleting knife and 4¾” vegetable knife along with a diamond edged steel to keep them sharp. Just three knives, but most chefs will only use one or two more at the most – and the Chinese use just one, a cleaver for everything! Cost £135. A Fibrox handled set cost £100. They should be purchased when you book (but at least seven days in advance) and will be waiting for you when you arrive for your course.
