Knife skills and Key Cookery Techniques

Learn an array of professional knife skills plus some essential cookery techniques.

This course is suitable for beginners as well as more experienced cooks.

A sharp knife, and the skill to use it correctly, is the foundation of all good cooking.  You will be amazed how much time this saves you in the kitchen!

You will learn which knives to buy and how to maintain them. You will also learn how to chop, slice and dice vegetables correctly and then use these vegetables to make a fresh vegetable stock and vegetable soup, a crisp vegetable stir fry, and a crunchy vegetable salad. If you have sharp knives you wish to bring to practice with, then please do bring them, otherwise knives will be provided.

You will then go on to learn some essential cooking techniques such as how to season correctly, understanding safe cooking temperatures, how to 'sweat', sear, sauté, and poach, plus how to make an emulsion for mayonnaise, and a fresh herb oil.

This course is packed full of advice and techniqes!

 You will learn how to:

  • maintain your knives plus what sort/size of knives you need in the kitchen **
  • chop, slice, dice correctly and then practice these skills on a variety of vegetables
  • 'sweat' vegetables and make fresh vegetable stock
  • stir fry, with guidance on how to scale up for family size stir fry's
  • sweat', sear, sauté, and poach food
  • make a fresh mayonnaise based dressing, a fresh sweet and sour sauce and fresh herb oil

** On this course, advice will be given on how to keep knives sharp.  If you wish to learn how to use a steel and stone, then please bring your own oil/whet stone and a steel plus a knife you wish to sharpen. If you do not wish to learn how to use a stone/steel then that is not a problem as this time can be used to practise more knife skills.

We’ll stop for a well-earned lunch of and share a glass of wine with our fellow foodies. While we’re sure you’ll want to sample some of the delights you have made along the way, there will be lots to take home at the end of the day, so please bring plenty of containers.
